1 red bell pepper, diced
1 tablespoon olive oil
Salt and pepper
1/2 cup diced onion
4-6 boneless, skinless chicken breasts

  • First step is Season chicken with salt and pepper. Heat oil in a large skillet over medium heat. Add chicken breasts and cook for 5-7 minutes per side, until golden brown and mostly cooked through. Remove to a plate and cover to keep warm.
